I have a steak that has been in fridge for 2 days in EVOO. You can see the red meat pulling away from the fat. Going to fire up the small and a couple scallops.

Looks great Mike.
Tonight we went with flank steak done two different ways.
I did one half rubbed with Billy Bones Beefmaster rub and Dr. Pete's Chipolte Glaze that I thinned out with burgundy wine. The other half was the same rub and teriyaki.
It's cold and windy here and I had a hard time getting the egg up to 500f so instead of 2 minutes at 500, I settled for 3 minutes at 450f on each side and then shut it down, leaving it for another 4 minutes. It came out much more done than I like, but you live and learn, right?Knoxville, TN

2 days in the fridge with EVOO and open air.
One day with Kosher Salt and fresh ground black pepper.
We will be testing these again at Oklahoma. :woohoo:

That looks melt in your mouth. You can see where the meat will just ease off. Nice pics.

Chicken looks really good. But I have another question? Is that an antique solid Oak dinner table?

Here's a couple of rib chops and some grilled asparagus. This a great and easy cook. good luck everyone, Tom

Drool....drool....
That settles it, I am going to HAVE to try Alton Brown's dry aging method on a couple of steaks on your own.
Nicely done!Knoxville, TN

I went with a couple of schnitzengruben and a rack of loin ribs with sauerkraut & onions. Not shown are garlic smashed potatoes.

I had cold cuts and some soup at church.
I do however have two nice thick 1/2 pounder Pine Club burgers thawed in the fridge waiting for the Egg for Thursdays lunch. Didn't hit the store for buns on the way home so there going to be plated "naked". -
Absolutey!!! My bride was looking over my shoulder at the time - had to wipe the drool off my shoulder. She said "look, they have left over christmas plates as well.
