How to build a NC style BBQ sandwich

Start by piling up the meat, then add the sauce.

Then pile on some slaw.

Then put on the lid and enjoy. -RP

Mmmmm. Looks good. Am I right in that this sammy would be a "Western NC" sandwich? Just curious, but what defines the geographical boundary for chopping verses pulling? Chopping, although overlooked by most cooks, is one of my favorite methods.Happy Trails~thirdeye~Barbecue is not rocket surgery

Some menus in the Lexington area have sliced as a choice. It always looked like pulled to me though...just bigger pieces...and all good!

I went to Greensboro College in 1960-62. I was the resident DamnYankee, one of only 19 "men" right after CG brought in us "co-eds."
Left there after flunking out gloriously, then spent six years in Uncle Sam's Army as a Russian Linguist in Berlin [Yep! The Army taught me how to study!]. Then, graduated from BYU, followed by MA+ at Minnesota.
All the time I was in Greensboro, I was so poor I never went to a restaurant... and the cafeteria kept feedin' me Rebel food... like... hominy grits...
I remember one fine day in February there were some sprinkles of snow. Everyone went nuts -- and there were more than 500 accidents reported from the morning commute!
The UNC-G plebs would drive by the campus and snicker...
Zheesh!
Talk about a former existence!

UNC-A here! whoot! Both my kids were born in Asheville..moved back to KY though when they were young to be near the grandparents...LOVE Western NC! ..and that sammich looks delish!!

Slaw recipe....being from the south...I don't really have the precise recipe in measurements. Something that is handed down from generations....so...here goes :
1 head of cabbage.....more depending on number of people
apple cider vinegar
can of diced tomatoes
green or red bell pepper
sugar
salt
black pepper
In food processor, chop up cabbage, and bell pepper. Put in a large bowl. Add the diced tomatoes, equal parts of apple cider vinegar and water, a few pinches of salt and pepper...add enough sugar to counter taste the salt....(don't know why). Mix thoroughly and serve at room temps. This can be refigerated for a couple of weeks at least. I go by taste and looks. Of course adjust everything to the amount of servings you need.

What's all that stuff in that slaw?

Eastern NC BBQ = Whole hog, Vinegar based sauce.
Western NC BBQ = Butts and Shoulders and Tomato based sauce.
Chopped or pulled is an individual preference and not really geographical; However, eastern tends to be chopped and western tends to be pulled.
Sliced is on the menu to make the Yankees feel better.. -
I'd say western. The sauce while runny is way too thick. The sauce I make has a lot more stuff in it than what I grew up with but it is water compared to most sauces.
