Tonights sacrifice: Pig ribs

Never used the 3-1-1 method before. Mine are always good but never "falling off the bone" so thought I would try. My meat market is closed today so had to snag these from the local grocery. Not fresh but will do in a pinch. Almost forgot to remoce the membrain but got it off. Coat in yellow mustard and rubbed down in my home rub. Recipe on request. Got the "Q" set at 250 degrees and stable. Stay tune. Wife is trying no kneed as rolls in the cursed oven. They are about as bad as a gasses grill. :evil:

It's the foiling that will cause them to fall off the bone. The last hour unwrapped is to allow them to firm back up. Tell Jake, his southern buddy says "Hey".

Will do. Runing late or would have let him check out the pig. He's supervising the wife inside now. I'm sure he will appear in the finnal burn photo's.

Doing ribs myself. 1st time I've used tjv's adjustable rig. Just going to let them go 5 or 6 hours and see what happens. Um....How is Jake? :(

Jake will make his appearance later. Doing fine though. Right now cleaning ou my iris bed for spring. Didn't do well last year. I know why now. Hate to throw alot of 'em over fence but got enough beds allready. Lets see. I cook, I try and snipe LeCreuset cook wear on Ebay, hanG out in the cookwear section of Wal Mart, redoing my flower bed.... man am I gay?!! :blink: If I start turning my wife down shoot me! :laugh:

"If it's wrong I don't want to be right" lol Live in S. Arkansas. About 60 degrees and sunny. The bed is done. Alittle natural fertilizer with the sourse. Also ribs after 2 hr. and fresh vegs on top.

They look great JL. Yesterday was ribs and planting for me to. You saw the pix of the ribs (not pretty) but wife and I agreed they were the best yet. I think ugly ribs might be better :laugh: :woohoo: . What are the veggies in the foil?

Rest of the squash and green beans in one and potatoes with EVVO and spices in the other. Figure they will cook slower than squash and beads.

They are on for the foil 1 hr. now. All ready falling apart. 18:30-19:00 central time.

Well hear is the finnal results. Had my working partner over. I must say some of the best ribs I have done. Veg's were done to prefiction and the bread was as always great. That no knead is a no brainer. Only let it raise 5 1/2 hrs from mix to in the pot and still great. Tomorrow: Butt!!

Rub with yellow mustard and coat with mixture of: like 3 parts brown sugar, 1 part peprika, 1/2 part each powder ginger, red pepper, chilli powder, pinch tarrigon. These are approx. as I tend to just dump things in till it feels good! :laugh: Cook at 250 for 3 hrs. indirect turning every hr and spraying w/ mix 6 parts apple juice and 1 part vinigar, wrap after good spraying in foil for 45 min. and reapply rub uncovered for another 30 min.

Irises like bone meal? Also got daffadils mixed in.

The bone meal will definately help the irises, I think that any rhyzomed plant benefits from bone meal. Dang, now do I have to be shot too? :unsure:
I work with a lady who is the pres of the Griffin Iris society yadayada.. She has the double bearded irises as well as the standards. anyway..HTH. -
you are not gay.. i will post some of my iris pics on a woosday. they were my mothers and rather than throw them over the fence i give them away or plant them in unsuspecting neighbors beds late at night when they are asleep

Been trying to give them away but in my part of the world getting caught in someones back yard at night is a good way to get shot!! :P
