Weird, huh?

Well, it sounds and looks like it goes good with PORK, chicken/turkey....

Anyone ever try it? Supposedly, it's quite popular in Alabama - goes back to the early 1900's, Bob Gibson's family secret formula.

It is every where in North Alabama, barbeque joints and grocery stores. There are several different brands like barbecue sauce. If you go into barbeque restraunts you get white sauce with chicken and turkey. If you ask for barbeque sauce you usually get a mix of vinegar and cayenne pepper. You have to ask for thick barbecue sauce usually called rib sauce.
  • Have tried it. Looks strange but is very good on chicken!
  • Jeeves,

I grew up 30 minutes from Big Bob Gibson's BBQ in Decatur, Alabama. The white sauce is very unique. We use it on chiken all the time. Just like any other finishing sauce, add it during the last few minutes of cooking and serve it on the side. Some people also use it as a marinade. Give it a shot, you may like it too. It will be something different.

Several year ago a friend cooked 20 boston butts on a large smoker. He rubbed them with a bulk rub he bought from Sam's Club. When they were done he covered them with white sauce wrapped them in foil and let cook about an hour. That was among the best pork I have had.

  • Hey Jeeves,

Haven't seen you around in a bit. Thanks again for letting me take your Digi Q and turbograte from Atlanta. I did pay your shipping so I hope you weren't charged.

Dr. BBQ also has the recipe in his book. It is fantastic on beef! I think that is better on beef than chicken.

  • Being in north Alabama, I have eaton alot of white sauce. Gibsons actually dips all of their chicken in the sauce. It has a good taste, but it is something you will have to get used to, it is not a sweet type sauce.
