Orange-Bourbon Planked Salmon

Came across some fresh salmon yesterday and decided to make this for dinnah last night.. I made a marinade that included OJ, Bourbon, Soy Sauce, Brown Sugar, Chives, Lemon Juice, etc. Scored and soaked the salmon for 5-6 hrs (1-2 would of been plenty), then after egg'n a couple of sweet taters plopped the salmon on cedar and added some asparagus for good measure. Total cook at 350 took bout 20 mins:

Plated with cheesed asparagus and sweet tater w/a cinnamon/sugar sprinkling..sorry bout the sink in the background..I was in a hurry to dig into this and didn't notice!...hehe

Once again the egg came thru..this was some of the best salmon I ever ate!

definitely..the secret to bourbon in drinking is age..the secret to bourbon in cooking is cheap.. I drink Woodford Reserve..one of the finest small batch bourbons you can get..I cook with Early Times...comes in a plastic bottle!!...heh..cheap bourbon is more 'odoriferous' and doesnt get as easily buried in the other flavors..so remember..drink the best..cook with the rest

Cool. I also enjoy Woodford Reserve for drinking, but because I started my bourbon exploration with Pappy van Winkle I was sort of disappointed with the finish of the WR. A couple of days ago, though, I picked up a 750 mL bottle of Gentleman Jack - only $24 bucks - and man is that stuff smooth! Great sippin' whiskey. Better finish than the WR, in my opinion. Have you tried it? Not small batch, but good stuff.

Interesting I'll have to try that. I usually drink and cook with Jack. I'll have to try the Woodford Reserve. I'm with TRex too Gentlemen Jack is very good.

Yeah..you're into an area now with as many opinions as there are brands..heh...I have tried gentleman jack and it is good..but it is a whiskey not a 'bourbon' whiskey..so there would be expected differences...being from Ky..I guess I'm a bit partial to bourbon whiskey..other really good (in the medium expensive range) bourbons I suggest are of course Maker's Mark & Knob Creek. If you can get your hands on it..Woodford Reserve 'Four Grain' Master's Collection, but this stuff gets up near couple hundred bucks a bottle...anyway..we're way OT I suppose..sorry.

Your right. The sink just ruined it! You can just send it hear to S. Ark and I'll dispose of it for you. Cheap whiskey accepted as well as the Jack.

Thought I would give this a try tonight and when I went to do the sauce i was way off! LOL no OJ and no bourbon. so I improvised BIG time and it was wonderful! used about 1 cup apple jc and 1/2 cup orange marmalade, a little soy sauce and when I went to get the bourbon, had none and nothing to close. SO i had a bottle of home made Vanilla , I use brandy and about 4 split vanilla beans and figured what the heck. so poured it in. I used a ceder plank and when it put it on it I spooned the marmalade chunks on top. they carmalized. cooked it at about 375 for 20 min. I tossed asparagus in the mixture that was suggested in an earlier post. Sorry i can't remember who it was, but it was VERY good and I will do again. mixed 2 tbls honey with 2 tbls evo. basted and it was great. will do again many times i am sure. Julie
