Crab stuffed shrooms, jalapenos, tomatoes

Trying something different. Stuffed mushrooms, jalapenos, and tomatos.
Approximate Ingredients
2 cups lump crabmeat
1 cup sharp cheddar
1 cup parmesan
1 cup italian bread crumbs
1 clove garlic
1/4 cup fine chopped onion
mushrooms
jalapenos
tomatoes
stick butter
zest and juice of one lime (not in pic)

Scoop mushrooms, slice and scoop jalapenos and tomatoes


Add lime zest, lime juice, and garlic to melted butter and simmer a few minutes
Cut up pieces of mushrooms that were scooped
Mix crabmeat, cheese, bread crumbs, mushroom pieces, and onion together
Add Butter mixture

Stuffed veggies ready to Egg

Nice. As usual I'm already thinking what I would do different next time. Think I might add a 1/4 cup of olive oil next time and a little Tony's. Some black olives and capers might work as well.

All the stuffing is already cooked so just enough time to cook the shrooms, jalapenos and tomatoes. I egged for a little over an hour at dome 300 on a raised grid. I have eaten a couple of each and I would definety add some olive oil to keep them a little more moist and some Tony's as a minimum. Prolly goin to add some black olives and capers as well.

Those look great! What would be the reason for the olive oil, were they dry? -RP

Yes - they came out a little dry. I would have usually boiled the crabs myself in crabboil which would have given more flavor, but I bought the crabmeat. The stuffing needed a little moisture and a little more flavor. They are okay but could be a lot better with a little tweeking. BTW - it was your italian sausage stuffed mushrooms which were a hit at a gathering this past weekend that started me off with trying a different stuffing.

Those look real GOOD. Maybe next time maybe use Portabella mushrooms add the jalapenos to the crab and cheese on top.
