Itialian Beef Ane Stuffed Peppers (w/ picks)
started out saturday afternoon

cooked to 140 internal and put it in the fridge for a couple hours to firm up and then it way on to thwe slicer

after the slicing it was into this broth mixture (which had the pan drippings) to boil for about an hour

i let it cool on the stove then into the fridge overnight. next morning into the crock pot till game time then put it on french bread with the girialida sauce. sorry no pick of the sandwitches because they got gone too fast.....
we also did AZPR's stuffed peppers. we put itialian sausage, about a 1/4 cup pizza sauce, and some chedder cheese into poblano and sweet red bell peppers.

then on to the small egg indirect (we were at some friends house or i would have used the large indirect raised)

cooked until the sausage was 165 internal
topped with a little more cheese until it melted

fun was had by all its just too bad football season is over we even got my little one involved with a little spirit

although the steelers season was over we were still showing our support for a good draft :woohoo: :laugh:

i have never eaten a itialian beef in chicago. i have never been to chicago but like their hot dogs and itialian beef. i have eaten itialian beef in atlanta near the big chicken.... now as far as comparing them i liked the meat in mine but their giardinera is way better than mine i used this recepie
Italian Giardineria
2 Whole Bell Peppers, Green, Diced
2 Whole Bell Peppers, Red, Diced
8 Fresh Jalapeños, Sliced
1 Stalk Celery
1 Medium Carrots, Diced tomatoes
1 Small Onion, Chopped
1/2 Cup Cauliflower, Florets, Fresh
1/2 Cup Water
Water to cover
2 Cloves Garlic, Finely Chopped
1 Tbs Oregano, Dried
1 Tbs Red Pepper, Flakes
1/2 Tsp Black Pepper
1 5 Ozs Jar Pimento Stuffed Green Olives, Chopped
1 Cup White Vinegar
1 Cup Olive Oil
Directions:
1 Place into a bowl the green and red peppers, jalapenos, celery, carrots, onion, and cauliflower. Stir in salt, and fill with enough cold water to cover. Place plastic wrap or aluminum foil over the bowl, and refrigerate overnight.
2 The next day, drain salty water, and rinse vegetables. In a bowl, mix together garlic, oregano, red pepper flakes, black pepper, and olives. Pour in vinegar and olive oil, and mix well. Combine with vegetable mixture, cover, and refrigerate for 2 days before using.

but it was no where near hot enough i think i will put some serrano peppers in as soon as i can get them
as far as the baby her mom feeds that youngan every three hours or so. she is wearing a 9 month old outfit and is only 4 n=months old i think i am in trouble :laugh: :laugh: :unsure:

Yeah, I've tried a few recipes for the beef but none of them ever tasted like what I grew up with. You can buy some Giardineria in jars in the pickle section. She is adorable! -RP

i got pretty close but missed it by some hot peppers. at least that is how i eat them when i go to atlanta.
i seen it in the pickel section but it did not look home made enough to me so i went with that one i have two quart mason jars full of it now i got to figure out how to get it hotter

there is some already in there... but it i am pretty sure if i used some serrano peppers i would be better off

Get some habaneros or THAI bird beaks and chop them up.. It will light your fire!

maybe some habenaros but i am a little scared of them i have used cerrano peppers before

I agree, A tablespoon of crushed red per quart, should do the job. shake every day or so for a week and check back next week.
