Someone at work wants me to smoke some tofu. I think apple smoke would be best. I thinking not longer than 2 hours. She suggested to buy the firm. Temp?
Any thoughts, comments or suggestions would be very much appreciated.
Thanx, Molly

I tried this a few months ago. It wasn'y bad, but even the extra firm will break apart if you are not careful!

Smokey -
i would get the firm or the extra firm. tofu is fairly bland so it should not take too long and will be easily over powered by the smoke apple sounds good. temp depends what you want to do with it after it is smoked, it you are going to eat it cold i would 'cook' it so it had a crust on the outside like fried tofu. if it is to be added to soup or stir fry [i.e. cooked after it is smoked] i would treat it like cheese and cold smoke it. let us know what you do and how it works.

Thanx Smokey, great pic! What temp and for how long? Did you use and wood for the smoke flavor?

I had planned to take it to wrok and let her use it. So maybe I should smoke it for and hour then up the temp and crust it. Keep the feedback coming. I have to meet a friend to go workout, I'll be back.
Thank you!

Mornin Molly
I love tofu many different ways. Smoked tofu just doesn't sound real good to me! However, I am not sure cuz I have never tried it ;-)
With an open mind. the only thing I can offer up is, if you do decide to smoke it, it would prolly be a good idea to have a very, very clean burning fire, and if you use wood, put it on long before the tofu. I think you'll want a real thin or even an invisible smoke. I can imagine that tofu really sucking up the smoke. And a hotter fire is a cleaner fire....so 300 or better seems to make sense.
As Smokey mentioned, grilled tofu can be really nice, and even that has a surprising amount of smoke flavor present.
Do you know what your friend's goal is? What he will be serving this with??
Good luck, and happy weekend.

If memory serves me (and it does less and less with age), I grilled it direct on a well oiled grill at about 375 for 4 or 5 minutes per side. Tofu is already cooked, grilling just adds some flavor. I used cherry wood, but I don't know if it would make a but difference (unless you used mesquite or something with a very distict flavor).

since it appears that none of us have done anythig but grill it, why don't you smoke it low for a bit take some off and then grill the rest. then you will have some of each and your friend can decide. keep us posted

Thanx guys for the feedback. Well I'm selling meats at work to raise money for my Rome trip in November. There are alot of vegitarians that work there and in hopes to get mo money she suggested the tofu angle. Worth a try. I think I will try your angle Nature boy. Does 5 minutes a side at 300 sound about right?

Yeah, could be 5 minutes, could be 10. I think in the case of grilling, you are mainly looking for some browning for flavor. So flip em when the color is right.
Wouldn't think you'd wanna cook too long because you don't want to drive out what moisture there is.
Just thinkin! Hope it works out.
