whatsa good substitute for the flavor, not just the heat. ive got some piquins i could use that have the heat, but im not sure how the flavor compares. did some crying tiger steaks in the wok last night and substituted red pepper flakes and some hot curry to the dipping sauce, but the heat was lacking and the flavor was changed with the curry. also have some penzeys vidaloo which would make up for the lost heat. tonight the steaks go on the egg.

Why substitute? Go to the asian market in Lawrence.
If you want to go with what you've got. Squish up some pequins with lime juice and honey. Don't know if that will get you where you want to go, but it will be hot and have some flavor.

since you two seem to be interested in the local markets so much lately...
the Market Basket in Salem, NH, is the only place locally i have been able to find Goya Valencia Rice, which is really suitable for Paella.
could always order Paella Rice on the 'net, but it's good to be able to grab a $2 box of the Valencia when you are in the stroe, too. -

There really is no substitute for the Thai Birds Beak, however the scotch bonnet and habanero from the caribbean will give the heat, but a little different flavor. If you really want to turn the heat up, get some red savina (sp) HOOOOOOOT!! 500,000 scoviles

111 S Broadway - Lawrence, MA It's called Hong Lac. If you're coming over the river from the north, it's on your right. There is a big church across the street and there used to be a bike shop on the opposite corner. It is also attached to a little restaurant that has good pho.

i know where the bike shop used to be, should be easy to find. i remember there used to be one of those japanese resteraunts over there before they got popular, the kind where the chef is part of the show, wonder if its still down there, it was real cheap back then.fukahwee maineyou can lead a fish to water but you can not make him drink it

Don't know if it's the same Japanese restaurant but Yokohama is farther down the road across from the Ford dealer. I was at their sushi bar last night.

if you have a latino or spanish market around you try a pepper called "Tepin" they are a member of the bird peppers and will put you where you want to be.
