I just purchased some really nice thick center cut pork chops that I plan to serve to company tomorrow night. Does anyone have a unique recipe for this. I really need to impress the company. thanks

I like to do a mixture of Dizzy Shakin' the Tree, turbinado sugar, cinnamon, allspice, and sweet hungarian paprika. Drizzle olive oil on the chops and then rub this mixture on both sides liberally. Then, if they're at least 1.5" thick, I cook them just like I do a steak. For a real nice and unique punch, add a guava chunk to the fire during the roast period.

    Cheers,

No, but I imagine it would be good. Just be careful with the sugar and the heat - sometimes I'll add the sugar after the sear. Also, if I'm really feeling strange, I'll add a sprinkling of cinnamon. Pork just calls for sweet spice and plays with it well.
