water head, here's how I do it. I have also started using the HiMountain dry cures. It makes a totally different texture of jerky, more like the commercial stuff.

Beef jerky is more about process then recipe. There are about 20 recipes in Wiseone's cookbook on the nakedwiz web site. I've gone to the horizontal method but I forget who has the web site showing the process. Thirdeye? Wessb? Hmmm. Here's a picture of the vertical method:
