Whole grilled pineapple

Unknown
edited November -0001 in EggHead Forum
Does anyone have experience or advice on grilling whole pineapples? I've heard of preparing the pineapple by sticking vanilla beans, chilies, ginger, etc., but don't have any information on cooking times/temps. Help please!

  • Patrick,
I've only grilled slices. 1/2 inch thick, coated in butter and brown sugar. 450 for 5 minutes each side. Top with ice cream and flaming dark rum. Some people add DP firewalk or something as well.[p]Ed

    Patrick,
When you say whole.... are you talking sliced, spears, halfed, hollowed, skin on/off?

  • Patrick,[p]Cleaning and coring a whole pineapple is a pain when it is cold, why do it when hot?
Here is one way I like to do fruit desserts.
Rick Tropical Delight will probably pop in.[p]Peaches, Grilled, Richard
    [p]INGREDIENTS:
Peaches, Pears, Bananas, Pineapple Slices or Wedges
    Coconut Flakes Chopped
Nuts, Your Choice, Pecans, Walnuts, Almonds, Chopped
Liquer of Choice--Gran Marnier, Amaretto, Orange, Banana Liquer, Myer's Rum
Turbindo Sugar or Honey for sweet
Butter, Melted enough to make a thick paste

    Procedure:
1 Chop the nuts and coconut flakes. Mix some melted butter and liquer.
2 Cut the fruit in half, remove the pits. The bananas lengthwise leaving the skin on. Place the mix on top of the fruit.
3 Place on BGE, direct or indirect around 300-350°F
4 Cook until the fruit is softened--10-20 minutes.
5 Serve with Vanilla Ice Cream, Whipped Cream Chocolate syrup and anything else you like.

Patrick,[p]This is a dessert that's always a hit around here. [p]And as far as pineapple goes we cut it into slices about 1/2" thick butter cayenne, turbinado sugar and serve with ice cream some serve with flaming rum or whatever.
