Roasted Chicken Soup with Wild Rice ala Egg

We did this with leftovers from spatchcocked chicken[p]Giblets, wings and pieces, necks, back spine from chicken
quart water
1-2 packets Goya chicken broth
celery, onion, carrot, parsley leaves[p]Boil up to make a broth. You can pull off wing meat or discard if you choose[p]Strain broth, chill and remove fat.[p]Add to broth:
1/2 cup wild rice mix (we like Texmati Royal Blend but you can use any or even good quality white rice)
celery and carrot slices
Cook until rice is soft, about 1/2 hour or 45 min.[p]ADD:
cut up cubed spatchcocked chicken breast. Heat until breast meat is warmed thoroughly.[p]This is even better after assembling on the second day. The roast flavor of the chicken really comes through.

    do you raise your own birds? I'd love to do that (used to have a flock of our pastor's in my backyard in NH but in suburban Delaware, it's not allowed and you have to register backyard flocks now.)[p]Someday, though, I aspire to having chickens again. [p]My husband, who is an enthusiastic new Egger and who is NOT a chicken fan, loves this soup. After the first conflagration when he spatchcocked the chicken (and my advanced degree in science explaining that opening the lid, whilst staring fixedly at the inferno, would FAN the flames) resulted in a mostly burned bird, but the cut-off meat was really excellent hidden in the soup. He might even revisit the chicken on the grill. I think we need to raise and use a small bird, as the small Egg has limited space even with a flattened bird.

    Haa... Raise Chickens!!! I don't think so. They are a real pain. Plus, we can't have live farm animals in our neighborhood. [p]The "Chicken Ranch" is named after the famed Chicken Ranch in LaGrange, Texas from back in the 1930's and 40's, and made famous by Dolly and Burt in Best Little Whorehouse In Texas. The Coop just seemed to be an appropriate name for our outdoor kitchen and is decorated as such. And since we live here on the ranch full-time I refer to Spring Hen and me as the Chicken Ranch staff. Visitors get a Certificate of Visitation, suitable for framing and hanging.[p]It's a lot of fun and live chickens would only make a mess of things.
