Roast Pork Loin Roulade == Recap!

Just served roast pork roulade for 150... on the Medium.[p]That's 12 pork loins, "spiral" cut [roll out like a scroll], stuffed and tied, rub applied for crust, seared TRex 2 min of each "side," and roasted indirect @ 350F to internal 140F... double wrapped in HD foil.[p]The stuffing was primarily apples, apricots with spinach, rice, sauteed onions and garlic... herbs...[p]Now, since I had to do this in three separate successive cooks, I placed the "finished" and foil-wrapped loins in the kitchen oven at 140F to wait for their compadres.[p]Transported the final product to the serving hall, pulled them out of the coolers and sliced 'em up to order.[p]Fantastic roast -- there was a line for seconds![p]Thanks to Eggfoot for basic Eggstructions and DrBBQ for his rub recipe.[p]But I'm not sure I'll attack such a large feed again with just a Medium. Zheesh! I'm ready for an XL![p]This is my largest feed to date. Have done several for 40, which is attainable with the Medium... but Yowza!   • Grandpas Grub,[p]Truth be known.... Wish I were there.[p]We are retired [as you know] and heavily vested in our home. With the housing slump, there's not much of a chance to move... but I wouldn't mind going back to the Wasatch front... or further South into warmer climes.[p]But, I don't think I'll be able to get my wife pried outta her homely home. [p]There isn't much holding me here.[p]~ B
