How many racks of bb ribs on XL BGE?
HokieBGE
Posts: 21
Our Christmas party for tomorrow night just went from 7 couples to 9. A couple of questions:
1. How many racks of baby backs would you cook for 9 men and 9 women?
2. What is the max. number you think I can cook on an XL?
3. How would you arrange them?

HokieBGE,[p]9 men & 9 women. Depending on sides and how hungry? I'd say at least 4 racks for the guys and maybe 3 racks for the girls. Including some for left overs and pre party testing. I'd go 10 racks. No problem fillting on the XL just stack them. If you'd like to do 20 racks on a LGE see link.

HokieBGE,
I have done this several times.
I start out doing the 3,1,1 method but there are changes. I start with about 5- 6 full racks. I set up a indirect cook, the racks on their edges and use a dome temp of 250, no less no more. I let them go for 3 hours, I then remove them to a 3-4 deep alum pan, I cut the full racks in half at this point. I cover the ribs lightly with the "sauce of the day" or what ever you will use at the end. Not too much as you don’t want to over do and steam the ribs. I then put the covered alum pans in the a Direct Egg setup and rotate top to bottom every 15 minutes to keep the ribs from burning, for an hour or so. I remove the covered pans and let them rest on the counter for about an hour. Next into the refrigerator they go till the day of grilling. On that day of grilling I set the house oven to 175 and just warm the ribs up for about an hour or less, just enough so the harden fat melts. Transport these to your final grilling spot. Now the ribs are ready for the final grilling and saucing. Just grill and sauce the ribs as needed. Like I said I have done this before and days ahead, the most I did were 18 racks over 3 days.[p]Terry

HokieBGE,[p]Biggreenegg.com says 14 vertically. But I've seen whiz's pic of 20 on a large so 14 would be a conservative estimate by that standard. I did 6 easily using the V rack and Car Wash Mike's method for a party. For 9 couples I'd say with sides, maybe 1 rack per couple, thats what my wife and I eat at home.

Buster Dog BBQ,[p]I have always cooked them indirect (low and slow 6-8 hours) using a V-rack. How does stacking them like that effect cooking time?
-
HokieBGE,
Took about 6 hours at about 230. They were great. After doing this I would prefer to lay them flat and not use a rack. I use a rack on the large all the time for capacity purpose.

HokieBGE,
I had 16 racks on the XL at one time for a party. 31 folks attended. No problem. Did stack some.
Plenty of food.

Buster Dog BBQ,[p]What is that thing on your grid at about 11 o'clock?
-
Beanie-Bean,
that is something eggfoot is working on for a tier. You can ping him and ask him more about it.
