In Law Worthy Breakfast Casserole

Cooking Thanksgiving breakfast for the inlaws and need a good breakfast casserole receipe. I read one here several months ago and tried searching the forums but it looks like since the switch to the new board all the links to eggtoberfest receipes are broken. Anyone have a receipe?[p]Thanks

  • Conundrum,[p]Here is a popular one from Eggtoberfest '07.[p]Eggs, Breakfast, Hungry Man
    [p]Ingredients :
    1 Pkg. bulk Sausage
    1 12 Ozs Pkg. bacon (chopped)
    1 Medium onion (chopped)
    4 small Jalepenos (chopped)
    1 Pkg. shredded Potatoes
    1 Pkg. shredded Cheddar Cheese
    12 eggs (scrambled)




    Preparation :
    1 Prepare Egg for indirect cook at 350 degs.
    2 In a large dutch oven render sausage and bacon.
    3 When bacon and sausage are fully cooked drain some of the excess grease.
    4 Add onion and chopped Jalepenos. Cook till onion is translucent.
    5 Add potatoes. Cook till slightly brown.
    6 Pour scrambled Eggs on top of mixture and cover with cheddar cheese.
    7 Cover Dutch Oven and cook till eggs are firm and cheese melted.
    8 Serve with hot buttered biscuits.

    My wife has cooked this one many times and at a few eggtoberfest...It is simple and good.

    Morning Conundrum:[p]Not a casserole, (click on the link) but is one of our favorite breakfast dishes especially on holidays because it can be preped the evening before and cooked next morning. [p]Have a GREAT day!
