Decided to try a pomegranate brine variation of MadMax Turkey

Well I'm currently using a pomegranate mixture to brine a turkey. I plan on cooking it using the Mad Max method with a variation of adding pomegranate glaze to the outside. I'm going to use the Mad Max method for cooking and gravy. I may add some fresh pomegranate to the bird cavity and maybe a little juice to the gravy.[p]I'll post results tommorrow.

    Rollocks,[p]Oooh - that should be interesting!! I wonder if it will make the turkey all pink?

    I will take some, the problem is that I'm not enought of dork to figure out to post them to the forum. Maybe if I get an xyz-box I might be able to learn. LOL[p]And the turkey is already turning pink from the pomegranate juice. It will be interesting to see how deep and dark the smoke ring will be with pomegranate dye present in the meat. It has been a long time since I brined a bird. I know that brining speeds up the cooking time, the absorbed water conducts the heat better. Does the faster cooking time effect the depth of the nice pink smoke ring?[p]Rollocks

    [p]INGREDIENTS:
    2 Ozs. Vodka, Peach, Absolute
    2 Ozs. Orange Juice, Fresh
    3/4 Oz. Pomegranate Mix, MONIN, Clearwater, FL




    Directions:
    1 Mix and shake over cubes of ice. Strain into a chilled martini glass.

    Big T,[p]I'm probably going to knock the temperature of my egg down 25º to 300º to counter the faster time for the brine. I always like a deep smoke ring in my meat.[p]Rollocks

    mad max beyond eggdome,[p]All I know is that it will be tough to top the gravy I made 2 weeks ago using your tried and true method. Fortunately if the pomegranate spoils original recipe, I have a small reserve in deep cold storage.[p]

  • Rollocks,[p]We keep the vodka in the freezer. Last christmas I cooked a crown roast of pork and in the off the egg time it waited 3 hours while we continued to sample the martinis. Happy Holidays.
