What to put in compound butter?

Just made a batch and was wondering, what do YOU put in your compound butter?

    Big'un,
    it would depend on what i intend to use the butter on. like when i make a mad max turkey i put sage and rosemarry and tyme in it. if i was making a compound butter for break i would look at what i was eating with the bread. i know that sounds kind of vague but that's how i do!! LOL[p][p]happy eggin

  • Big'un,
    Compund butters are great for many things. We used to make a wasbi, and pinapple one for a tuna dish we made. Capers and dill are great for fish. Sun dried tomatoes are awesome to. Anything that goes well with your particular dish can go into a compound butter. They also freeze great if you have left over butter. Try some carmalized onions or shallots with some chives maybe for a steak next time. Just some ideas. Hoss
