Rick,
i have a question i noted that you said you used cherry wood for smoke can i use a chunk of apple all i have in cherry are the chips but i have apple chunks and the turkey breast i want to smoke is about 7-8LBS +/- i want to do this tuesday night to take to work wednesday morning i also wanted to try an injection of creole butter marinade i want to WOW my Co-Workers as well please advise thanks

yep, apple or cherry, chips or chunks, whatever you have will work fine.[p]i've got a good two handfuls of cherry chips on right now 1:45 into a turkey breast and it's smelling fine!

Looks great hope mine is will be as nice as yours LOL ohh i accidently cut some of the skin away from the breast will that affect the breast in any way it appeared to be a big piece of fat so i cut it off ( live and learn i guess )

How long do you cook it and at what temp the last one i did was a little over two hours and between 250 and 300 i think

What was in the rub on the top photo. (small chunks of some kind of spice) Man does that look good.

we're still talking about turkey breast now, right?[p]i smoke them at 250-270 indirect, about 4:30 for a 10 pound breast, 3:30 for a 7 pound.[p]pull it at 160 internal, no matter what the time or dome temp

Apple is primarily all i use on poultry. i have used both chunks and chips. i prefer chunks but no noticable difference to me. good luck and enjoy
