i am the expected winner and it's almost cheating with the egg and a free range bird. it's just me aqainst one other turkey with about 25 people in total so everyone pitches in and makes something. i think someone is making a duck. i just ordered two 20 pound turkeys tonight, one for thanksgiving and one for the throw down.

Have any suggestions for NOT being able to get the crusties on the bottom of the roasting pan?
I have an old aluminum roasting pan I use. It's about 5/16 inch thick. It heats even enough that things roast very well in it, but I never get that crud build-up in the bottom.

Setting up my brine bucket for turkey breast then going into town for a couple bottles of chardonnay. I will make some fix'ens, just not in large portions. Man, I'm getting hungry just thinking about it. Tomorrows dinner will be a mini pre-Thanksgiving Thanksgiving. DianaQ will be in charge of pumpkin pie with real old fashion whipped cream. drooool.[p]

that is perfect! i've got a turkey breast in the freezer for monday, time to put it in the fridge to thaw. i've never brined anything. nothing. i reckon i need to at least try it once to see what all the ballyhoo is about.

both, actually! it's a local place that has a fresh turkey order form. the fancy grocery stores in the area have their birds too, but i like to go right to the farm.

You will like brined turkey. My brine is light on salt, high on flavor. This time around I went with 2/3 cup salt, 1 cup brown sugar to one gallon of water. Also in the mix is fresh cracked pepper, onion powder, garlic powder, half sharp paprika, tyme, rosemary and sage. I start with 4 cups of water in a non-reactive pan and add the dry ingredients, heat to a simmer and let it cool then add 3 quarts cold water and the turkey breast. Into a 2.5 gallon food bag it goes and that sits in the brine bucket in the garage where it's nice and cool. I got the same brine bucket as RRP, an insulated water cooler.
