Turkey meatballs
Did a couple of tri-tips the other night per Morro Bay Rich, they were about 2 lbs each and EGGcellent. [p]Then with fire still hot added some turkey meatballs for the next day. This recipe should make great turkey burgers or a meatloaf also. [p]Turkey, Ground Meatballs
[p]INGREDIENTS:
2 Lbs Turkey, Ground
1 Large Onion, Chopped Small
2 Whole Eggs
1 Cup Favorite BBQ Sauce
1 Pkg Lipton Onion Mix
"OR"
1 Pkg Knoor;s French Onion Soup Mix
2-3 Tbs Dijon Mustard
1-1 1/2 Cup Grated Parmesan Cheese
1-2 Cups Italian Bread Crumbs To Bind
BBQ Rub of Choice
Procedure:
1 Mix all ingredients except turkey and bread crumbs. Then mix in turkey. Slowly add in portions the bread crumbs, careful not to add so many that the meatballs will be dried out. Make meatballs about 1-1 1/2 inches in diameter. Sprinkle with your favorite BBQ rub.
BGE:
1 Set up BGE for indirect cook at 350°F and add some smoke of choice. I used apple. Place meatballs on rack with a smaller grid pizza rack to keep the meat from falling into fire. Cook about 35-45 minutes. Can be frozen
Yield: 3-4 Dozen

Rick's Tropical Delight,[p]Sampled a FEW direct off the egg, no sauce. Next day did rigitoni paste, meatballs and red sauce. Nice smokey flavor!
