Hi folks...found this recipe on "The BBQ Brethren" site posted by "Gunrunner2491" and thought I'd share.[p]Wild Things [p]10 chicken thighs
5 jalapeños
1 package cream cheese room temp. ( I only use Philly)
10 slices thick sliced bacon
toothpicks [p]1. First I debone the thighs and discard the skin, or buy boneless
2. Slice the jalapeños in half lengthwise, and for a not so hot wild thing discard the inner membrane and rinse
3. With a spoon place cream cheese in the jalapeño half and place inside the the chicken thigh and roll it.
4. Then roll a slice of the thick sliced bacon around the chicken thigh
5. Then place a toothpick through the bacon , chicken thigh and jalapeño pepper to hold it in place.
6. Then if you have a pepper mill, grind coarse black pepper on the chicken with some Tony C's and grill it or smoke it.
7. After it's done slice cross ways [p]I plan on substituting the thighs with bonless skinless breasts and smoking them for about 2 hours at 250 deg with a little applewood.[p]JD

JD McGee,
Now that sounds tasty. I do believe I may try it. However, I'm not sure about how long you want to cook those breasts. I'd cook closer to 350º there isn't a lot of fat in the breast or connective tissue like there is in the thighs.
Thanks
