Does anyone have any tips or good recipes for armadillo eggs? I saw them on a tailgating show yesterday and think I'll whip some up this weekend. [p]For those who have never heard of them, they are jalapenos stuffed with cream cheese, encased in spicy ground sausage, wrapped in bacon and then grilled.

    Suck Creek Wings,[p]When I make them I don't wrap in bacon. I also like some with a sweet or breakfast sausage to give a contrasting flavor to the hot pepper.[p]The original recipes I read called for Bisquick in the sausage, which I tried & did not like. They also called for yellow food dye in the cream cheese, which does look neat when you cut them, but I don't do that anymore either.[p]~thirdeye~

    Basic ABT: pepper cut in half, seeded, stuffed with cream cheese and wrapped with bacon.[p]Basic Arm Egg: Pepper cut and seeded stuffed with cream cheese (yellow food coloring added to look like egg yoke), both sides of the pepper put back together to form whole pepper ( some people cut top of pepper and seed from the top), entire pepper is then encased in a sweet sausage. When you cut the Armadillo egg in half it looks cool.[p]So in short, one is wrapped in bacon and the other is totally sealed in a sausage.

    Not sure if you already know or not but protect you hands from the peppers. Cleaning them bare handed is not fun...
