First Eggsperience
Last evening was my first eggsperience cooking on my LgBGE. I put the egg together after carrying it in pieces to the back yard. One of those hot Texas summer days, but all went well. Last evening my wife and I put a 4# Chicken with a brown sugar based rub on the Egg at 350 degrees. Recipe suggested 2 hours, but since this was a smaller chicken it was done in about an hour and 20 minutes. Great flavor, very moist and a real first success. I used beer in the can on this one, but am going back to regular Coca Cola, since it just seems to offer that great flavor for the chicken. It is SO EASY to regulate the temperature on the BGE compared to my large traditional smoker. I am absolutely hooked and will be doing Salmon on an Alder plank this weekend and some steaks one day next week. Great forum and there is a ton of information here.

Eager Eggeer,[p]Welcome to the Cult of the Big Green Egg. IF some guy named Peter (Omba) asks if you know the secret handshake, feign ignorance. [p]Again welcome and don't hesitate to post often and ask all the questions you want.

Eager Eggeer,[p]Welcome to the Lone Star chapter of the cult. There quite a number of us. Texas is blessed with year round grilling weather. Check out the butcher shop in Giddings if you are south central Texas. They have the best steaks, briskets and roasts I have found.

Eager Eggeer,
sounds like the first was a success congrats!!!!![p]
just a word to the wise keep your egg below 450 for the first few (6-8) cooks. there are people i have heard of who melt their gasket on the first few cooks, but they have always gone above the 450 deg mark. [p]
if you keep it low for they first few cook it gives the adhesive glue a little more time to "get attached" to your egg.. i did not have this trouble but it seems like there has been a rash of new eggers here recently that this has happened to....[p]
make sure you check out

for your required reading make sure on the naked whiz's site you learn how to post some photo's off that new egg..[p]

eggerave, Thanks for the reply. I am on the north side of Round Rock, but Giddings is not that far. Most of our meat, poultry and fish comes from the local HEB :-) So I am looking for a good shop that specializes in Beef.
Thanks Again

Eager Egger,
same here, right down the street from the police station on Egger Ave in Egger Estates. The butcher shop in Giddings is a lot less expensive that Central Market and has better beef than HEB. Costco is also a good source for briskets and salmon filets.

eggerave, I am actually in Stone Oak near the Texas Crushed Stone Quarry. I don't see any meat markets in RR, but there is one in Taylor. Next Saturday the wife and I will make the drive to Giddinggs and see what we can find. Just got 2 rib eyes at HEB, but barley an inch think. The have better cuts, but the price goes from $6/lb to 13.40/lb. I love Central Market, but the traffic and parking are horrible,

Eager Egger,
The City Butcher shop in Giddings will cut them to any thickness you want. They have a good BBQ resturaunt in the back of the shop. We will be there next Saturday about lunch time for lunch and to reprovision.
