Brisket rub with white sugar

I've done a little light looking and can't find the answer, so I figured I'd save some time and ask the masters here. [p]I have seen pics and descriptions of people using white sugar as a rub for a brisket. I am thinking about trying this with a brisket I am putting on tomorrow night - just for a little change of pace.[p]Am I dreaming that I've seen this before or can someone help me out?

You should use turbinado sugar instead .In the super market it comes in a brown box labeledSUGAR IN THE RAW SUGAR.You can mix this with brown sugar and be o k .It will not burn like white sugar.

I cover in rub then white sugar overnight in a covered container. I was told the sugar starts to breakdown the collagen. The sugar will be gone in the morning. If not, wipe off any excess and add more rub no matter what.[p]Mike

Hi Mike.That is the first time I have seen white sugar used as a overnight rub and then wipe it off.Dr. "Ray"and lots of other folks suggest the sugar from Hawaii when using it in a dry rub of whatever so you you wont have burning issues.
