In the true sense of barbecue, I am looking for a good baked beans recipe for my new cast iron oven. Tried the one listed on the 'submitted recipes' page last weekend with not much success. The beans lost all of their liquid and came out more like refried beans :-([p]Any help would be much appreciated,

Egg-N-Tino,[p]I recently tried a bean recipe from Dr BBQ's book using my 2 1/2 quart cast iron pot. I used two 48 oz cans of beans and an 18 oz can of cherry pie filling. I think the Dr recipe called for one 48 oz can and a cup (8 oz) of pie filling.[p]Cooked it indirect for littl over an hour at 250º. Came out great. I[p] A week later I tried it with apple pie filling. I like the apple better.[p]Rollocks

    Egg-N-Tino,
Chubby's Chipotle Firecracker baked beans. I do these in a cast iron dutch oven and they ROCK!! One of the best baked bean recipes I have ever had.[p]Try this link to Wess B's site. I believe they are in one of the Eggfest cookbooks.

<p />Egg-N-Tino,[p]When using canned beans, Keri's have become my number 1 baked beans. They are really, really good. The last batch I made was for 100 and I used fatties for the sausage. I lost track of the compliments we got that day.[p]For some other bean recipes, made from scratch, click the link below and look in the side dish section of my cookin' site. A fatty page is there too if you are not familiar with smoking them.[p]~thirdeye~[p]Keri's Hog-Apple Baked Beans[p]3 or 4 slices bacon, diced
2 (16 oz) cans pork and beans, mostly drained (modified to 2 28-oz cans Bush's Baked Beans - see note below)
1/2 c. Blues Hog BBQ Sauce (or other sweet-spicy favorite)
1 lb. smoked leftover smoked pork or beef, more or less, or 1 lb crumbled cooked pork sausage
    1 can apple pie filling
    1 medium onion, chopped
    1/2 green pepper, chopped
    1/2 c. brown sugar
    2 Tbsp. Worcestershire sauce
    2 Tbsp. Mustard (prepared)
1 tsp chipotle or cayenne powder (optional, to taste*)
1 tsp Blues Hog barbecue rub (or your favorite de jour)[p]Brown bacon, and saute onion and green pepper in bacon grease. Mix in remaining ingredients. Bake at 325º for 1 hour, or simmer on stovetop in large pot for 30 minutes if you don't have time to do them in the oven. Serves 12.[p]This recipe began life as APPLE PIE BAKED BEANS from somewhere on the web, but I think I've made enough changes to it now to claim it as my own. This is my standard for baked beans anymore.[p]*This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.[p]Keri C, smokin' on Tulsa Time
_____[p]Lately, I've been using two of the 28-oz cans of Bush's Original Baked Beans - I think I'm going to try it with the new Honey variety next. Happier with the results with these. -kc[p]Another update... Jack's Old South does something similar to this, but I understand that they use peach pie filling instead.

Egg-N-Tino,[p]Since I already posted the Boston Brown bread here is the Beans to go with it.. It will take a awhile, but they are worth it.[p]1 quart Great Northern bean (or pea beans)
3/4 pound fat salt-pork (this is important)
    1 tbsp Salt.
    3 tbsp Sugar.
1 tbsp to 1 c Molasses (according to taste I prefer the 1c)
    1/2 tsp mustard (if desired)
Boiling Water[p]Pick over the beans remove any bad ones, cover with cold water and let soak over night. Make sure you cover with plenty of water as beans WILL double in size.[p]Drain and cover with fresh water, heat slowly (below boil) until skins burst. Drain Beans. Scold Pork and remove a 1/4" slice and put in bottom of Dutch Oven.[p]Cut through the rink on remaining pork every half inch, making cuts 1" deep. [p]Put beans in Dutch Oven and bury pork in beans leaving the rind exposed. Mix Salt, Molasses, Mustard, Sugar, 1 cup of boiling water and pour over beans; then add enough boiling water to cover beans. Cover Dutch Oven and bake at 275 degrees dome for 6 to 8 hours. Uncover the beans the last hour of the cook. Add water IF needed.[p]

Rick's Tropical Delight,[p] Argh! Argh![p]That is the weekend a group of my buddies are coming up to visit from California. Not to weird anyone out, but it is going to be a 'Testicle-Festival'. None of my friends have eggsperienced my cooking off the egg yet. Over the years I have been known as the 'cook from the Q', but that was when I perfected my charcoal Weber skills. They are in for a whole new treat this time around. [p]Anyway, hope you have a good time visiting in Vancouver. Drop a line on the board and I will do my best to answer.[p]Egg-N-Tino
