page 261 of dr bbq's big-time barbeque cookbook.[p]try it... it's fabulous. the hardest part is trying to carve out the half shell without destroying it. you can make it without the halfshell though...

Thanks Rick, looks like you did a pretty good job cutting it. The easy way out is to just get an extra pineapple and then you don't have to get all the pineapple out of the show half. I've taken to adding a little rum to it these days too.

Rick's Tropical Delight, thank you Rick..can cut the shell because when I make my fruit trays..I use a pineapple shell for the french cream dip or Kahlua dip I use with the fruits. Pineapple is such a delicious fruit!

i had another pineapple, but i didn't mess with it. it worked out pretty well, but it'll be easier next time, i'm sure. i used pussers rum in the marinade for this...
