Advice on Rubs for St. Louis Ribs

I like old school cooking. Making my own rubs & Sauce's. We like a little sweet and tang on our ribs. Always used sauce at the end of my cooks when it comes to ribs. I like to try this cook with no sauce just good old rub. Can anyone direct me to a good rub for St. Louis Ribs. Thanks for any help at all. [p]Pork Butt Mike

Pork Butt Mike,[p]I don't have my cookbook handy, but here's approximately what I use as a basic rub.[p]1/2 cup kosher salt
1/2 cup turbinado sugar
1 Tbl black pepper
1 Tbl mild paprika
1 Tbl onion powder
1.5 tsp. garlic powder
.5 - 1.5 tsp. cayenne pepper (I like hot, my wife not so much)
1 tsp. dried yellow mustard
a dash of any/all of the following:
nutmeg
cinnamon
allspice
cumin
ginger[p]Depending on your preferences, you can go heavier on the "dashes." A bit of dried lime or lemon zest is nice. Lots of other dried chili powders work well. Sometimes I add a bit of thyme and sweet marjoram.[p]If I want a sweeter rib, I've been giving them a mop at the end, and then a dusting of sugar. A few more minutes in the Egg then gives a nice crust. Or, use more sugar at first, but be sure to not let it burn.[p]Beyond salt, sugar and pepper (of any kind) rubs seem to be largely a matter of taste, and style. Take it where you like.[p]gdenby

i like gdenby's rub. keep it basic. i would add more paprika and 1 Tbsp cumin and coriander. coriander can burn but it adds a nice dimension. and i use brown sugar instead of white. also ancho chile powder. guess its not so simple.

[p]Ingredients as follows:
2 tbsp Spicy Smoked Spanish Paprika
1 tbsp Cumin
2 tbsp Brown Sugar
2 tsp Fresh Ground Pepper
1 tsp Ancho Chili Powder
2 tsp Garlic
1 tsp Onion Powder
1/2 tsp dried Cilantro
Kosher Salt to taste (I use about 1 tbsp) [p]As I understand Ancho Chili is used in chili powder if you can't find it.
Spicy Spanish Paprika is my favorite, we get it online.[p]Cheers,[p]JerryD
