<p />Wife likes thin burgers. Each time I make them, thinner and thinner, she says thinner. I caught the AB burger rerun but was a little reluctant on his method because Krystals just opened nearby and their thin burgers stink: No Bueno![p]A couple weeks ago, a good friend and I contemplated the secrets to a melt in your mouth burger. He runs a successful restaurant and suggested; for thin burgers cook them hot and fast on a griddle. So, that's what I did, egg style! [p]Rolled out the hamburger meat (75/25) to about 3/8 inch thickness, fired up the egg to 600 degrees and dropped the cast iron griddle on the Spider, let it heat up for 20 minutes and started griddling....is "griddling" a word
.[p]100_0230.jpg[p]Onions are in the foil. I dropped them on the griddle right after dropping the griddle in the fire ring. They started to sizzle in a couple minutes. They went up top to simmer and stay warm while the burgers griddled. [p]In the pic above, check out the water droplets dancing on the hot griddle. Ironically, all I needed to work the burgers was a spatcula. With the pan in the fire ring, it absorbed almost all the heat from the lump. [p]100_0241.jpg[p]It took about one minute per side to cook the burgers. It was the fastest thing I've cooked on the egg. [p]burger.jpg[p]Without question, this method needs more experimentation, maybe smoke the meat a bit in the dome before griddling. Surprised me how good the burgers were. Wife said....I told you so, make 'em thin. I said, yes honey.....LOL![p]

    maybe get some mcdonalds patties and throw one on for her when shes not looking. we had a source when we were in college, ate alot of those come 2 in the morning, not too bad in a pan on a hot plate

    ive always considered mcdonalds as a good quality product for the buck and for what it is, now we got a new long john silvers in the area, what are they thinking putting those places near the coast, ive never eaten anything worse.

    Nice one...although I have seen some fine photos shot down through the top dome with the daisy wheel removed. Not sure I would stick my camera or head over the top of a TRex style cook

    Not to high jack the thread but I had the best burgers I have ever had the other day. I put a little bit of lea and perrins in the burger. Then threw them on the small with the raised grid, with an indirect setup, 400 dome. I could not tell you time cause i did not really pay attention. Oh and I think there was a peace of cherry in there two. And to top it all off a fat piece of cheddah on top. Its great when it all comes togeather and the food is extra yummy.
