Chicken and Dumplings on the Egg

Inspired by ClayQ's brats and dumpling pic from woosday, I tried C&D on the Egg. I started by getting the Egg to 350 with a direct setup and grilling six boneless skinless chicken thighs seasoned with salt, pepper, and paprika. Took them to 190 internal.[p]IMG_0287Small.jpg[p]Then made a roux with flour and butter.[p]IMG_0290Small.jpg[p]Added 4 cups of homemade chicken stock and let it come to a boil, whisking occasionally. [p]IMG_0291Small.jpg[p]Then I shredded the chicken and mixed the dumplings.[p]IMG_0293Small.jpg[p]I added the chicken to the broth.[p]IMG_0294Small.jpg[p]Then dropped the dumplings.[p]IMG_0295Small.jpg[p]Let them cook for 15 minutes.[p]IMG_0296Small.jpg[p]Then ate, was very good with a smokey flavor on the chicken meat.[p]IMG_0298Small.jpg[p]Next time I'll probably add diced carrots and celery to the roux, but this was very good and I got to use my cheepie Target pan finally. -RP

    man that looks good i LOOOOVE dumplins. i dont usually make drop dumplins though i like to take canned biscuts flatten them out and use a pizza cutter to make little strips of dough. i have made the drop dumplings from bisquick and ended up using to much had almost matza ball looking dumplings. that will be my first thing i do in my dutch oven when i get one..[p]happy eggin

    My wife is a southerner and her idea of dumplings is rolled out and more like a thick noodle. If I could come up with a different name than dumplings, she would probably like mine, oh well. -RP

    I'm impressed with that cook. That is a must do for me. I got ClayQ's recipe and was going to use it in a roast but I like your chicken idea better. AZ

    That does look mighty good. I love "dumplings" in potato soup. My grandma from PA used to make her soup that way. She just mixed egg and flour and dropped them in. Kinda dense and hard but they were good in potato soup.

    Haha... no offense but I've lived in the south my entire life and I agree with your wife! I took one look at the photo and said to myself "what kind of dumplings does he eat". Thick noodle dumplings rule! Though... I would at least give yours a try. :o)

    Hey buddy that looks great! Growing up my Ma would make dumplings on occasion, usually with sauerkraut dinner but after seeing your post I'll make some with chicken. With Polish sausage it just hit me during the cook that I could try some dumplings, easy enough that it's made and cooked at the end. Reminiscing, my Ma's dumpling were sinkers....think she made'em with eggs and lead, don't know. But mine were light as a feather and much better. Sorry Ma.

    mad max beyond eggdome,
    2 cups flour
    1 Tbs baking powder
    1 tsp salt
    2 eggs
    3/4 to 1 cup buttermilk
    herbs of your choice
    Sift dry ingredients together in a large bowl. Lightly beat wet ingredients in another bowl. Gently fold wet into dry until they almost come together. -RP
