Frozen Brisket

Was looking thru the meat case at my local market and found a Brisket that was priced incorrectly (.37 cents a Lb). However; already had plans to do a butt then took off for a business trip. Well, now I have a cheaply bought brisket flat in the freezer and not sure what to do with it. Does the freeze kill any flavor ? Should I defrost it on the counter, rub it down when thawed, marinate then cook ?[p]Any advice would be helpful,[p]Egg-N-Tino

Egg-N-Tino,[p]We have used briskets at competitions that have been frozen and have done very well with them. While it may just be in our heads, we do prefer a fresh to a frozen but will not think twice if all we have available is a frozen brisket. We feel it is more important to have a good quality brisket as opposed to just any brisket that may be fresh at the time.[p]The safest is to defrost the brisket in the fridge. Just put the frozen brisket in the fridge 2-4 days, depending on size, before needing it and it should defrost just fine. Then prepare it the same way you would a fresh brisket.[p]John

You know, I have thinking about this all day. Spending over 20 years in the grocery business. Seeing my parents work 80 hours a week to try and make a living. Send 3 kids threw college. Next time, grow a concious. Get the one you want and inform the meat dept. of the error, they probably would have gave a great deal on other items. It was a prime opportunity for you make a great contact with the local meat cutter to better meat at a better price. The grocer makes 1-1.5% net on pre-tax sales. Inform the head butcher and you won't enter the department again without getting a hello and a rundown on what's on sale, what's good, and what to shy away from.[p]As for fresh or frozen, how it is prepped and cooked makes a much greater difference.
