Steamer Clams

edited November -0001 in EggHead Forum
Neighbor just dropped off a bunch of steamers. Egg's already smokin a ham so its hot. Any ideas how to cook the clams? Never done it on the BBQ, but want to use Egg for everything.

  • Bunga,
I did a five pound batch that fit beautifully in a half size aluminum steam tray, put about an half-inch of water in bottom (could use wine or stock if preferable) and put uncovered on a very hot egg (450 or so), put lid down, and they were done in about 10 mins--stirred them once at five minutes (will depend on size). they were smokey and wonderful (I wanted them that way to make smokey clam chowder). If you put them directly on the grate, the juices will run out, but if you didn't care about the clam broth, that would work fine, too. Anyway, there's probably lots of ways to do clams, but this worked great for me...if you didn't want them smokey, just cover the pan...
