Knife Sharpener recommendations

does anyone have any recommendations of something that is simple and works? i have the electric chefs choice but i don't like the way it reshapes the edges and eats metal away.

    Groundfish,[p]If you have decent knives, I strongly suggest learning how to sharpen your own using water stones, or ship them off to this guy: http://www.drsharpening.com/ Dave's great at sharpening and does most of his work through the mail. He receives knives from all over the world, and he's reasonably priced.[p]Best of all worlds is to ship them off to Dave to get a good edge started, and then learn how to preserve that edge with a good steel (assuming you don't have Japanese knives). Send them off to Dave once a year and you'll forever be happy :)
  • Is Dave still doing knives? I thought I heard he was going to specialize in hair shears.[p]If you want to maintain the edges yourself and have the money to spend then I HIGHLY recommend the EdgePro sharpener.

    I use the same one that you use also.I take mine to a pro,just ask any restraunt owner or butcher who does theirs in your home town.For a low cost and very effective way to maintain the edge I have found that a diamond steel will work well.I use one by Dexter Russell,low in cost and very effective.Hope this helps.If price is no object you can find a lot of other options out there.

    Spaceman Spiff,[p]He had to move this past year, and has centered in on knives. He's very active over at the knife forum.[p]I have an EdgePro too, and it is a great idea. I'll sound like a broken record, but I'd still ship out to Dave to get the proper edge, and then maintain with the EdgePro. I didn't believe it till I saw it with my own knives and eyes, but Dave will send the knives back to you with sharper edges than new. He'll profile the knife with the ultimate bevel for the steel in the knife... If you're not that much of a fanatic (like me) the EdgePro is an excellent solution.

    Groundfish,I have a Laskey Sharpening kit with the more expensive diamond stones. It is very old, but will sharpen my old Buck 110 hunting knife to face shaving sharpness if done properly. The downside is that the process is very time consuming. I use the same one you use for my kitchen knives for speeds sake and a relatively decent edge.

    A couple of months ago Cooks Illustrated reviewed both electric and manual sharpeners. They found the Accu-Sharp manual sharpener ($11) did as good a job as the best electric sharpeners. I have both the Chef's Choice electric sharpener and the Accu-Sharp. I prefer the latter by a long shot. I suggest you check it out. It is extremely simple to use.

    Spaceman Spiff,[p]Me too! I don't think the EdgePro can be beat. Edges hold up better then if they are hollow ground.[p]With the edgePro you can end up with a highly polished mirror finished flat bevel. This is a premiere edge!

    I have the Spyderco System. It comes with a video. It doesn't take long to get all of your knives up to snuff.[p]SpydercoSharpener.jpg[p]The photo only shows the fine stones but it also comes with medium stones as well.
