Indirect with pizza stone question
just purchased a medium BGE. I am going to cook ribs tomorrow and I want to use indirect method but I do not have a plate setter yet. I found a couple of pizza stones but they are about the same size as my grill surface...only about 1/4 inch gap around the edges between pizza and ceramic. Are these stones to big? if so any alternatives? i read about fire bricks. where can I get those? any thoughts would be appreciated.

Tarco,[p]I just bought an egg last week and I am doing to same thing, however, I was able to get a plate setter. I have read through some question on the drip pans and one response was that he did not use a a plate setter as the drip pan caused the heat to be indirect. I would think your pizza stone would be ok - I have not measured it but the plate setter does not offer too much more room with the large egg. I was going to put several layers of foil with a drip pan on top of that if I could not get my hands on a plate setter. Good luck!!!

baby back ribs. this will be my first rib experiment. Do you think foil makes a difference? I have been reading about 3-1-1 and thought i might try that.

Baby Backs do the 2-2-1 method. St. Louis style ribs 3-2-1.[p]Two hours Indirect 250 dome temp.[p]Two hours wrapped in foil 250 dome temp.[p]1 hour direct 250 bone side down... last 20 minutes brush with BBQ sauce..
