tjv,
Being a fellow scallop love. Yes, yes, and again yes. See you in Omaha.[p]Mike
-
Car Wash Mike,[p]I like to place 1/2 whole water chestnut in the scallop for a little added crunch.
-
Rick's Tropical Delight,[p]Do you deliver? I got some Copper River salmon just coming off the smoker that would go well with those scallops.[p]~thirdeye~

Richard,
I tried to add those to k-bobs and couldn't, any ideas?[p]Mike

Car Wash Mike,[p]I use a very small diameter skewer, so as not to split the water chestnut try and go thru the end to end of the chestnut. When not skewering they are cut in half and stuck in the middle of the scallop.
Kikkoman has a great teriyaki basting sauce that I like.
-
Richard,[p]Do you do the 15 minute soy sauce marinade on them or is that too strong for the scallops?[p]~thirdeye~
Happy Trails~thirdeye~Barbecue is not rocket surgery -
thirdeye,[p]Kikkoman's marinade is very thick, so I just use it as a basting sauce.
PS: For the drumstick/wing racks is that direct or indirect??

Rick's Tropical Delight,[p]Delicious looking meal, Rick. Compliments too on your very nice exposure on these photos - you do lighting very well.[p]TREx

Richard,[p]Try just a marinated water chestnut wrapped in bacon. We nicknamed them PigNuts on another forum.[p]Yes the racked drumsticks or whole racked wings are a direct cook at +/- 250° . If you are using your Rig, you can play with the height to find the sweet spot. I think one rack will fit in all positions and two fit in the lower heights.[p]I've even been using the racks for oven baked chicken for the freezer. Two or four to a vac bag. Had a pot pie filling tonight over drop biscuits with some baked drumstick meat. [p]~thirdeye~

thirdeye,[p]I have been a fan of rumaki, chicken livers wrapped in bacon w/kikkoman marinade for years. I just like the crunch of the water chestnut. Happy 4th.
