Very, very smooth butt....

cook. [p]Cooked two eight pound butts. Put on last night at 10:30. Just took off at 2:20. Just under 16 hours. [p]Have spent some time fighting temps during some of my previous cooks. Not this time. [p]When I lit the egg last night, the dome temp went straight to 250 - like a bird dog pointing a covey of quail. Locked in right where I wanted it. [p]Put butts on - hooked up Maverick (so could get some sleep). [p]Smoothest butt cook I've ever had (though only had 5 or 6 on the egg). [p]Had a few fluctuations on temp - but didn't chase em. Used wiggle stick once. Other than that and a few minor adjustments, just stayed patient and let the egg find where it was comfortable. [p]Butts are foiled and in cooler. Will wait a while and pull em (few errands to run). Gonna put in Foodsaver bags and seal - taking some to beach and gonna freeze some. [p]Meantime, gonna mix up some sauces. [p]Can't wait to see what they taste like (used Blues Hog rub on one and Dizzy Dust on the other - I'm interested to see what the differences are). [p]Anyway, that was one very smooth and very enjoyable butt cook. [p]Bubba T
