hot dog chili recipe

In december or january there was a recipe for a chili sauce that was to be used on hot dogs, it sounded great. I thought I saved it but can not find it, any help will be appreciated..

    [p]2 cloves garlic, minced
    1/2 cup onion, minced
    2 Tbs olive oil
    1 lb ground beef
    1 tsp salt
    1/2 tsp black pepper
    1 Tbs prepared mustard
    1 Tbs vinegar
    1 tsp Worcestershire sauce
    1/2 tsp Tabasco
    1/4 cup ketchup
    1/2 cup tomato juice (1/2 to 1 cup)




    1 In a large heavy skillet cook garlic and onion in oil over moderate heat, stirring, until onion is softened.
    2 Add beef and cook, stirring and breaking up any lumps with a fork, until cooked through. Drain off any excess fat if desired.
    3 Add remaining ingredients, adding just enough juice to create a spoonably loose but not soupy mixture. Simmer sauce, stirring occasionally, 10 minutes.
    4 Makes enough sauce to top 6 hot dogs.

    Here's the best I've found so far. This is just about as good as the chili at the Varsity here in Atlanta. They make great chili dogs!
    [p]Ingredients:
    1 lb ground chuck
    1 3/4 cups water
    2 Tbs chile powder
    2 tsp paprika
    1/4 tsp cayenne pepper
    1/2 tsp cumin
    1/2 tsp granulated garlic
    1 tsp granulated onion
    2 tsp salt
    1 dash tobasco sauce




    Directions:
    1 Put water and all ingredients except meat into saucepan and stir well.
    2 Add meat, breaking it up with your fingers as you go.
    3 Bring to a boil, reduce heat to a simmer and leave uncovered until nearly all water is gone and the consistency is the way you like it.
    4 On the EGG, bring the cooker up to about 350. Allow the chili to cook until texture is the way you want. It may require adding more water and allowing it to cook off.

    2 pounds ground chuck, crumbled
    2 medium onions, finely chopped
    5-6 cloves garlic, crushed (use garlic press) or minced
    1 (15 ounce) can tomato sauce
    2 tablespoons cider vinegar
    1 tablespoon Worcestershire sauce
    10 peppercorns, ground
    8 whole allspice, ground
    8 whole cloves, ground
    1 large bay leaf
    2 teaspoons salt
    2 teaspoons ground cinnamon
    1 1/2 teaspoons cayenne pepper
    1 teaspoon ground cumin
    1/2 ounce unsweetened chocolate, grated[p]Bring water to boil in a 4-6 quart pot. Add the ground chuck (do not brown first). Stir until separated and reduce heat to simmer. Add onions, garlic, tomato sauce, cider vinegar, and Worcestershire sauce. Stir to mix well. Add peppercorns, allspice, cloves, bay leaf, salt, cinnamon, cayenne pepper and grated unsweetened chocolate. Bring back to a boil, then reduce to simmer for 2 1/2 hours cooking time in all. Cool uncovered and refrigerate overnight.[p]Skim all or most of the fat and discard. Discard bay leaf

    This recipe does not fry, only boiling. It is a southern chili recipe for hot dogs and hamburgers [p]ground chuck,about two pounds (fat content for flavor)
    One large onion chopped
    garlic to taste, about one table spoon (either powder or minced, your choice)
    Salt and black pepper to taste
    Chili powder,about two tablespoons
    Rubbed sage, two tablespoons
    Ketchup,about one cup

    In a large pot mostly for room, put in ground chuck and cover with warm water. With your hands, squeeze the meat through your fingers until it is of a fine texture. Place on stove. add all ingredients. Make sure meat is covered with at least two inches of water at this stage. After water starts to boil, turn down to low and cook until most of water is gone. stirring ocasionally. This makes a fine chili for hot dogs and hamburgers. If you like heat, add some dried peppers to your taste. [p]Chef Jerry

    Rick's Tropical Delight,[p]Great stuff...I make it all the time and then I freeze it in small portions so that I can have it anytime I want on dogs.....and anything else!
