Okay, I think we all have left-over chicken once in a while, and I know egged chicken makes the best chicken salad sandwiches. So… what’s your favorite recipe? I just made some yesterday with nothing but mayo, green onions, celery and DP STT.[p]Ed

Eggiantor, I add diced onion, celery, green olive, mayo, and a small amount of cruched caraway seed, s&ptt.

I do not have a specific recipe -- just wing it when I have left over chicken. I start the same way you did and then add a little chopped apple (I like granny smith) and golden raisens (althought the regular raisens are good too).[p]I like adding a little mustart too.

I really like the 'sonoma' chicken salad with grapes. But recently I had some with dried cranberries and that was yummy too.[p]Gwen

Eggiantor,[p]What I like to do with left over chicken is to mix some ranch dressing couple 2-3 or 4 tbs. and some Frank's hot sauce, about 6-12 drops or to taste. Kinda like buffalo chicken salad.

Tarragon-sp?, little mayo, little ranch and a little of whatever I rubbed the chicken with. I also leave the chicken in fairly large (bite sized) pieces.
