Pork shoulder vs Butt times?

Any difference between a shoulder or butt on time? I've not done a shoulder in a long long long long time. I've a vague recollection that I have and went the butt route to avoid the bone and fat. I just can't recall the when......or if it takes longer.

I'm confused. My pork butts have bone and a lot of fat. Shoulders usually have the skin attached. Did you cook boneless butts?

The difference is so slight.The shoulder takes about five more minutes per pound over the butt.Trust your trusty polder to tell you when it is done.

To be a little more exact between the two cuts the cooking time is between 40 and45 minutes per pound.

That time is based at 350 but low and slow will be a time factor but as I said at first it is at a minute difference. Sorry I have been a pain.Should have done this in one post.I think I am getting a Spring Chicken sympton.

yes the butts I get have a bone and fat. I normally trim the fat for more bark.[p]Their is more bone in a shoulder I think....I'll know tomorrow. I'll remove the skin from one and not the other for a little Eggsperimenting. Gonna inject one too......now to decide which one :>)

That little leg bone will be sticking out. If you get a nice peice of meat the feet won't be attached. LOL
No doubt in my mind you will do fine.

I think what you are calling a shoulder is the pic-nic. Actually a whole shoulder consists of the pic-nic and the butt. It is getting harder and harder to find whole shoulders anymore. -RP

I picked a packer up too. Got one without a huge fat cap on it and the one that looked like it had the largest point. Gonna go for some burnt ends on Thursday as the brisket is going on tomorrow night.

Actually the butt is more the shoulder than the pic-nic. The pic-nic is closer to the knee. -RP

And I've never understood why the pic-nics are typically sold skin on and butts skin off. My father in law taught me to skin the whole shoulders in order to get more bark, and thats the way I've always done them. -RP

The big side has the ball from the joint still on the end of the bone. and their is a leg stub on it....maybe 4-6 inches or so.
