How do I serve a fat T-rex rib steak?

I T-rex'd two fat boneless rib steaks tonight for the 4 of us. They were 2 inches thick and weighed in at over 1-1/2 pounds each. Since one was too much for any of us, I bias sliced them and served on a platter. However, it just seemed wrong to do that to a rib steak. How do you serve a big ole thick rib or strip steak if it's just too big for one person?[p]Thanks,[p]Ed

    Have me over for dinner and you want have that problem ;=) It won't be too big for me! LOL Seriously, That is one HONKIN cut of meat wow! I am so jealous. I had burgers tonight ground chuck. Not a big selection at the grocery store today.

    My wife and I usually share one large steak served just as you describe it. We cover a platter with fresh herbs (rosemary, thyme, parsley, chives, garlic...) and maybe some salad greens dressed with a little salt, pepper and olive oil. Set the hot steak on it while it rests. Remove the steak. Slice it. Put it back on with another small drizzle of olive oil. It's the best!

    if the plan is to serve 2 inch thick steaks but smaller portions, i would cut them first before cooking. just a thought, they will cook pretty much the same that way.
