Let it rest covered in foil and a towel for about an hour in a cooler and you are done. 195 is ideal. [p]Chef Jerry

Take it up now wrap it in foil and place in a dry ice chest wrap in towels and let it rest for a hour. The temp of the meat will go up a few more degrees. Sounds like you nailed it!! ;=)[p]Regards, Pharmeggist

It's done. If you have time before you eat wrap in foil and let sit for 30 min to 1 hr, pull and serve should be great, if not go ahead and pull.
