Rat Toes - What say ye?

I have copied a recipe from a great seafood restaurant here in Atlanta for a party tomorrow. Essentially these ATB but with a raw whole shrimp in the cored jalapeno wrapped in one slice of thin bacon with a toothpick for good measure. I am considering smoking these at around 225 until done, but am concerned about the shrimp getting overdone, do you think I should cook higher temp to finish the bacon at the same time as the shrimp, any thoughts appreciated and Happy Memorial Day weekend eggers!

    eggonatl,[p] If you are doing ABT's with the cream cheese then the moisture from the cheese, the pepper and the bacon will keep the shrimp safe.

    I do shrimp ABTs at 350 dome indirect on a raised grid for about an hour. You don't have to flip them over, they crisp evenly. You do have to move them around to make up for hot spots. -RP

  • Celtic Wolf,[p]Thanks but no cream cheese in this scenario. The ones done at the restaurant are grilled over an open flame, but I am going to try and smoke em and see what happens, I got a buck says they all get eaten either way
  • AZRP,[p]great answer and nice pic, I am not doing the cream cheese, I just have literally jammed a large shrimp down the a whole cored jalapeno's throat, add a little Q-rub before they go on the grill and them I am going to follow your advice. thanks.[p]i'll post my results although figuring how to get a picture on here aint that easy -- for me.

    Sounds like no bacon either, if that's the case, they won't take very long to cook. -RP
