Meat grinder update with 4 large pics

Well here you see the setup getting ready to grind.[p]DSC00001.JPG[p]And here we are doing what was supposed to be the first of 2 grinds, the second grind just didn`t meet my satisfaction..This MACHINE ground 73# of beef scraps in 14 minutes, and Hayhonker was my witness..Need to figure out the second grind issues...[p]DSC00003.JPG[p]And then we ate it...1-2 minutes per side on the mini at around 600° and then a ride on the large at 350° to finish em off and melt the cheese...[p]DSC00006.JPG[p]And they was ummmm goooooodddd.[p]DSC00004.JPG[p]Wess

    LOL...she actually took the 2 pics of the burgers on the grills...and she just told Jason him and I could play grinder operators and she would just stay out of the way....I know a good thing when I got it...LOL[p]Wess

    that is very impressive. i have been getting more into sausage latley. i almost tried to buy your kitchen aid grinder from you when you got that behemoth of a grinder. oh well i guess i will breakdown and buy one soon. i have been haveing Fattie Friday every friday and sooner or later i am going to grind my own when i do i will look to you for guidence.

    WessB,[p]Looks good. At that rate of grinding you don't have to worry about the meat being out of the cooler very long.[p]What are the issues with the second grind?[p]~thirdeye~

    For whatever reason it put out something on the lines of a pate~ (sp) tried it first with the smaller plate and then with the original plate..same results.....will try the first grind next time using the smaller plate and only grind once....a single grind is hands down a hell of a lot less work than a double grind..haven`t really researched why if happened yet..to much fat..not enough fat..really don`t know at this point...it did make some great burgers tho..[p]Wess

    I've been doing single grinds because stuffing the ground stuff back down the KA is a pain, and the meat warms up too much by the time I get done. Your machine looks awesome, my pint sized version of it is supposed to be here Thursday. -RP

    WessB,[p]If your beef fat (or fattier beef) was separate from your cubed beef, chill it more before grinding. Get it icy. Some folks will grind the fat with a smaller plate to allow it to mix in better, plus you don't see big chunks of fat. Better eye appeal and more even flavor kind of thing. If you are going with a 80:20 ratio, the 20% fine mixed in might be enough to change the complexion of the finished product to the degree you don't want a second grind. I'm a once through guy myself, especially on sausage. Unless I want a dense product.[p]Anyway, back to the grinding issues. Maybe I'm reading you wrong .... are you saying you are changing plates for the second grind? Just run it through twice with the same plate. As fast as your machine grinds I wouldn't even re-chill before the second grind.[p]~thirdeye~

    I tried the second grind initially with the smaller plate..and it is way smaller than the the first plate...when that gave me issues I went back to the larger, first grind plate, and basically got the same results as far as the consistency of the meat...I will try a single grind with the smaller plate next time...either way this attempt even doing a single grind with the larger plate turned out some great burgers..When I was using the KA grinder I didn`t have these issues with the second grind..not real sure, but as I said...not really disappointed at all with the single grind results[p]Wess

    Fire that puppy up..LOL...you will quickly learn how easy it is to clean being that all of the food contact pieces are stainless and can go in the dishwaher..[p]Wess
