Tropical theme party fixins?

What are good sides at a tropical theme party when the weather is hot? How about eggable main dishes as well.

I'd like to think that this is the type of margarita that Travis McGee, or my friend Dave (my astronomy teacher), gone almost two years now, would enjoy on a nice relaxing day of the week, no matter the weather, when the Egg is going and the daytime skies will give way to a clear night with Sirius blazing down upon us.
[p]1-1/2 oz Good Tequila: Patron, Cabo Wabo, or the like (not Cuervo)
1/2 oz Cointreau
1/4 oz Grand Marnier
Sweet and Sour Mix
Lemonade
1 Fill a glass with ice.
2 Pour tequila and cointreau over ice.
3 Add a dash of lemonade (cuts the margarita better than anything)
4 Fill with Sweet and Sour
5 Float Grand Marnier on top

leave out the sweet and sour!
if you like the margarita with it, please try it without. nothing kills top-shelf tequila like sweet and sour.[p]...on the back of cointreau there's a recipe for the 'traditional' (some say 'original' margarita. it still allows the tequila to shine through.[p]...it's essentially two parts tequila, one part cointreau, and a splash (maybe a half-part) lime juice. you could also add an equal amount (a half-part) of simple-sugar syrup.[p]

Charles,[p]For main dishes, any jerk or mojo marinated meats are great. (Add dark rum to marinade). Good sides are bean salads, ceviche, slaws, gazpacho, etc.[p]One of the best "tropical" meals I ever had was a birthday party at my house for my many March birthday friends. I was going to be in New Mexico until the night before the party, so I mailed out recipes from Steve Raichlen's 'Miami Spice' cookbook for people to make and bring. It was fabulous. The book was published in 1993 but is still one of my favorites.[p]
Publix has a good mojo and makes great key lime pies.... [p]Julie[p]Rick Bayless has a great ceviche recipe I can e-mail to you.[p]

<p />J Appledog,[p]Everything in this thread sounds good! And speaking of Key lime pie, Richard gave me his favorite recipe for one. It's easy (even for me) to make and has a coconut crust that really makes it special. And if you are making the margaritas he chimed in with below, you can add some of the Gran Marnier to the crust[p]~thirdeye~
