Best Prime Rib yet!!!

Some pics of the Prime Rib I cooked up yesterday...the best one yet!!! Cooked for 4 hours at 250 degrees at grill level (just under 6lbs). Rubbed with olive oil and then treated with Dizzy Pig Cowlick rub, rosemary, oregano, thyme, and a sprinkle of turbinado sugar. Half way thru the cook, I sprinkled some beer over top of the roast and then poured the rest in the drip pan...not to add moisture...but just to add another dimension to the taste. I also used a good handful of hickory chips. It was pulled at 130 degrees internal.[p]With ribs pulled off...first cut...[p]
[p]After a couple of slices....[p]
[p]In a bit deeper...perfect!!![p]

Rob in Bathurst, NB,[p]Looks great! I am sure that it tasted as good as it looks. Think you would need to make mine a little thicker cut (LOL).[p]-Charlie
