Chicken Confit, Roasted Sweet Potato, Salad and Green Tomato Chutney

Put the chicken leg quarters in a bag with olive oil, butter, bay leaves, fresh parsley, salt, whole peppercorns, and an obscene amount of smashed garlic. Set it to 165F for eight hours. Once done, hit it with an ice bath and then once cooled, broiled to crisp the skin until golden. Served with sweet potato roasted in olive oil and salt and pepper, and a homemade salad with homemade dressing (olive oil, balsamic, Dijon, maple syrup and salt and pepper). Served with a green tomato chutney I made a while back (hell of a recipe. The tartness was perfect counterpoint to the rich chicken).
Whole family enjoyed. Definitely a “make again”, as my wife would say.

My better half made chicken dinner too. Chicken legs pan fried with chopped onion and garlic, then added potato, bay leaves, cloves and cardamon, cooked till tender. Served with rice and cabbage, tasty gravy and potato competed with the chicken.canuckland -

@GrateEggspectations - I'm thinking you run on little sleep to be able to crank out these masterpieces and work all in the same 24 hour period.
Outstanding and bonus for standalone.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
