Overloaded Paella this PM-

A quick back story: Paella was the cook of choice today. Asked the extended family (older son and wife with 3 granddaughters 2, 4, 6 yo), solo son and SWMBO what they would like:  
Below are the going-in groceries:

Yep- a boat load of inputs: scallops, shrimp, sausage, chix, lots of veggies and garlic (no vampire action tonight) all beyond the required sofrito ingredients. 

Game on: Overloaded 15.5 inch vertical handled pan on LBGE.  Landed with this great pan many years ago courtsey of @Little Steven.  He's front and center every time I use it.

Timing a bit of a trick as I had to deliver to my son's house (around 5 miles away and then hold for extended grand's play). Turned out quite well even given grossly overloaded.  Minimally scored the soccarat (a quick pic).

Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    looks great @lousubcap - would love to see a picture of that pan when not loaded up. Looks like a flat bottomed wok from the angle.  Are you cooking direct? sure looks like it.

    Likely is a wok type as it is flat bottomed.  As you know paella pans are flat bottomed but this one is not dimpled as are my other different sized pans so there's that. It's a Typhoon 15.5" (aka 39.4 cm) pan.  I'll PM a pic after I field day the pan. Yes, this cook runs direct raised grid around 400*F/205*C.

    A fun cook but definitely a mis en place adventure.

    We need to see more of your cooks in such a well documented format, Cap. Being someone who loves mise en place and all things prep, you had me at pic number one.

    Cap, that looks amazing, I want that to be my last meal! Love the term 'solo son', guess I can say I have a solo kid too 😂
    Embarassed to say I got myself a paella pan when I got my first Egg, tried it once or twice and gave up. Maybe one day I'll need to revisit and repair my paella game  :)
