Alder-smoked Salmon

Had a bit of rub left over from making novalox a couple weeks ago, market had single salmon cuts on sale, and some broccolini (I hope) that I needed to use up, so, lunch!

Just rinsing the rub off before cooking isn't enough, I need to soak it in cold water for 10 minutes or so, was just a bit too salty for my taste. Sauce was 1/4 cup Kewpie, 1 minced chipotle, and about 2 tsp honey, stirred together. Thx for looking.

We started using alder when roasting salmon on the BGE this summer. In combination with cherry smoking wood and various rubs it can't be beat. We generally do salmon once a week.
