Chili Verde and Arroz Rojo

Cook started yesterday. Saw a pork butt marinated with Hatch Chili at Costco. Decided a Chili Verde would be awesome. First made the Verde sauce. 
Next, I cut the pork up into large pieces and threw on the grill to “sear” and get a little smoke. 
Then threw it all into the crockpot to braise. Forgot to take pics of the veggies going into the blender with some chicken stock, cumin, onion and garlic powder and a little cilantro.
For dinner made some homemade Spanish Rice with some cotija and lime. It was a fantastic dinner and fairly simple, if not time consuming. 


Next, I cut the pork up into large pieces and threw on the grill to “sear” and get a little smoke. 
Then threw it all into the crockpot to braise. Forgot to take pics of the veggies going into the blender with some chicken stock, cumin, onion and garlic powder and a little cilantro. Ended up shredding the pork instead of leaving it chunky. My wife has some sort of meat aversion to chunked meat 🤷♂️.
