Indirect Gear?

I bought the adjustable rig with two half moon stones for cooking indirect and direct on the large bge.AI says I should have bought the slow and sear. What do you think. Testing the rig today. It has so many fans, I don’t think I could have gone wrong.

Both the Slow 'N Sear system and an Adjustable Rig (like the one from Ceramic Grill Store) are excellent third-party options that improve on the standard Large Big Green Egg (LBGE) for indirect cooking, but they achieve it through different designs and excel in different areas.

The best choice depends on your primary goal:
Choose the Slow 'N Sear (SnS) Cooking System for LBGE if you prioritize:

 * Two-Zone Cooking/Reverse Sear: This is the core strength of the SnS. The contoured charcoal basket (the SnS insert) creates a clear, concentrated charcoal area on one side, and a large, dedicated cool (indirect) zone on the other. This makes setting up a perfect reverse sear simple: smoke on the cool side, then move the meat over the hot coals to finish.

 * Access to Coals: The design keeps the coals to one side, making it easy to add more lump or wood chunks mid-cook without having to remove the heat deflector, which is a major convenience over the standard setup.

 * Moisture/Smoke: The Slow 'N Sear insert for the LBGE includes a removable water reservoir along the hot zone, which adds moisture and helps regulate low temperatures for true low-and-slow smoking.

Choose the Adjustable Rig (AR) (with a ceramic diffuser stone) if you prioritize:

 * Maximum Capacity: The AR is a multi-level rack system that lets you stack two or more cooking grates high up in the dome. This significantly increases your total cooking area for things like multiple racks of ribs, butts, or a large number of wings, all cooked indirectly.

 * Flexibility and Versatility: The AR offers far more configuration options, allowing you to easily switch between different cooking heights (raised direct, high-dome indirect for pizza, etc.) and dual-zone setups (using half-moon stones and half-moon grates).

 * Easy Handling of the Indirect Stone: With a dedicated rig, you can often lift the entire assembly—grates, food, and the diffuser stone—out of the EGG in one motion to transition to direct searing or to access the fire.

    two zone cooking they will bothe perform the same, but you will not get a huge difference like a reverse sear where you may want to low and slow at 250 then raise the temp to 750 for a sear. the ar will work better and you wont need the doubl moon stones for a reverse sear. add a spider for indirect and there is alot more setups

    was not aware of the slow n sear for a BGE and it’s been out a couple years. check out the briquettes in this cook!

    i have considered sns for a weber but usually use that for quick cooks — and the charcoal baskets in a 22 do a pretty good job. 

    for an egg, it is a unique concept in that it brings the fire above the fire bowl to where the grid is. then the grid is at the felt line like raised grid.  not terrible but seems to waste some space below the fire. 

    at the price it is, i would recommend the ceramic grill store or bge options.

    I think I bought my AR 10 years ago, and still haven't used every possible permutation of the system. Its such a great accessory, that BGE plagiarised it!

    Re: the Slo 'N' Sear, I don't understand the need for a water pan, nor the need to add charcoal, etc. during a cook. 

    I've said this before - anyone thinking about buying anything from Ceramic Grill Store should speak with @tjv The website has a dizzying array of options, and Tom swill steer you in the right direction. He's an egghead himself, and won't do you dirty.
